Directions: Overnight, cover the apricots with soy milk. In a bowl, combine flour, baking powder, and ground almonds. Mix the flour thoroughly with the melted sugar and soy milk. Add the toasted almonds, the apricot mixture, and the almond flavoring. Together nicely. Place in a 6′′ round cake pan coated with nonstick cooking spray and bake for 50 minutes at 176°C. A toothpick should pass the test unharmed in the pan, cool.
